Wanted: Bread Pudding

I spent a ton of time in the kitchen over the weekend. It felt good to re-stock the fridge and whip up some new treats, including a scrumptious bread pudding!

I had an entire baguette that was past its prime, but I didn’t want to throw it out so I combed my cookbooks and combined a few recipes. This is what I came up with:

4 cups bread, cubed (I used my crusty baguette)
¾ cup chocolate chips
¾ cup granulated sugar
1 tsp cinnamon
3 eggs
3 cups milk
1 tbs vanilla extract

Coat a 9x11 casserole dish with non-stick spray. Spread bread cubes evenly in the dish. Top with chocolate chips.

Whisk sugar, cinnamon, and nutmeg in a bowl. Whisk in eggs, milk and vanilla extract. Pour mixture over bread, pushing down the cubes so they absorb the liquid. Cover and let sit for 30 minutes.

Preheat oven to 350°. Place casserole dish in a larger pan (I used a larger casserole) and pour hot water in the outer dish (about half-way full). Bake covered for 30 minutes. Remove cover and bake until puffy and golden, about 30 minutes.

Be careful as you remove your bread pudding from the water bath!

Enjoy warm, or cold (as I will for breakfast). It's a fairly simple bread pudding, but yummy none the less. You could top it off with a sauce, or even some vanilla ice cream.

Looks delicious! What a great way to use crusty bread. I'll have to try at my next dessert/LOST party.
