Wanted: Saturday Morning Pancakes

I had a few requests (ok, so it was just one) for my go-to Saturday Morning Pancake recipe, mentioned here. Well, ask and you shall receive! 
I love this recipe because it’s simple, easily made with ingredients I have on-hand, and the pancakes are deliciously fluffy.
Ingredients
1 cup all-purpose flour
1 tbs sugar
2 tsps baking powder
½ tsp salt
1 egg
¾ cup milk
¼ cup butter, melted
Combine the flour, sugar, baking powder, and salt. Combine the egg, milk and butter: stir into dry ingredients.
I pour the batter using a 1/8 cup scoop onto a greased hot griddle. Watch for bubbles on the top of the pancakes and then turn.

The great thing about simple recipes like this is that you can make them your own by adding your favorite ingredients: pumpkin butter, chocolate chips, banana, you name it!
